We present a simplified take on a drink found on our latest drinks list. This is a large-volume prepared mix that is loaded with tastes associated with holiday season, making it excellent for hosting a festive gathering. Reserve the remaining syrup for morning drinks, desserts, or to mix additional servings of the drink.

Yields 10 servings
Ingredients for the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar
For the Drink (produces 850ml, to serve 10)
400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (as made above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Instructions
To prepare the Cordial: Put all the items into a saucepan, bring to a light boil, agitating until the sugar dissolves. Then, take off the burner and leave to reach room temperature fully. Decant to a sealable bottle, cap it and refrigerate it chilled, it will last for up to one month.
Preparing the Premix: Mix all the liquid ingredients into a large bottle, let it rest for an hour, then pass it through , ideally through a fine cloth, to ensure it's completely strained.
To serve: Measure 85ml from the premix into your stirring glass containing ice, and stir carefully for a minute until cold. Strain into an cold coupe glass or equivalent, garnish with the cranberries adding the final touch by giving it a brief mist of the essential oil over the drink.
